I tried 1.14 on one of "old worlds"  I use for that purpose.

Pros:
- it's much easier to get food; apart from campfire which doesn't require fuel, one can now hunt for fish with sword/axe - it's easy to catch it in water
- iron is generated in larger quantities (since making jack-o-lantern now wears down scissors, it really helps)
- wandering traders are fun (not of much use, but still fun)
- grindstone allows removing enchantment - a nice thing
- composter allows recycling unnecessary food - also great thing
- scaffolding is great tool, even though bamboo can be a challenge to obtain
- foxes, trading llamas, cats (and their morning gifts) are also great and/or fun things
- the rest of new items/new blocks (such as stonecutter, lantern etc)

Cons:
- game once again gets more chaotic and harder - ravagers, other illagers, and the "Bad omen" itself is a terrible thing
- one can only merge worn items (to get a repair bonus) with grindstone - that means it should be taken and placed when  merging is required - very inconvenient

Overall impression: game is definitely better, there are more convenient things now.
